Instant Pot FriChik Curry

TOTAL TIME: 45 minutes | SERVINGS: 4-6

INGREDIENTS

8 oz Curry (1 box curry, like Vermont Curry or S&B Golden Curry)
1 Onion, diced
5 C Water
4 Small Potatoes, cubed
4~6 C California Blend Vegetables (Carrots, Broccoli, Cauliflower) Рabout 16~24 oz. frozen bag
1 Tbsp Olive Oil
4 Eggs
1 Can FriChick
Shredded Cheddar Cheese

 

EGG & FRICHICK PREP (THIS IS STEP 8 BELOW):

  1. Whisk the eggs until they are evenly yellow.
  2. Fry in a frying pan using a little bit of oil.
  3. Fully cook on both sides without burning.
  4. Remove from heat and cut into 1.5″ strips.
  5. Drain liquid from the FriChick can. Cut the smaller pieces into 4; cut the larger pieces into 6.

 

INSTANT POT:

  1. Press the SAUTE button. When the display reads HOT, add olive oil.
  2. Add the diced onions and saute for several minutes until translucent.
  3. Add potatoes and vegetables. Stir and give it 1 minute.
  4. Add 5 cups of water to pot.
  5. Close the lid and set the steam release handle to SEALING.
  6. Press CANCEL to stop the SAUTE.
  7. Press the MEAT/STEW button and set the timer for 20 minutes.
  8. Prep the egg & FriChick (see above).
  9. When the timer stops, allow the pot to naturally release pressure. Instant Pot will automatically go to KEEP WARM and the clock will start.
  10. When the clock hits 10 minutes, flip the steam release handle to VENTING.
  11. When the float valve goes down, open the lid.
  12. Press CANCEL to stop the KEEP WARM.
  13. Press the SAUTE button.
  14. Add the FriChick pieces and curry cubes. Stir occasionally for 5 minutes.
  15. Press CANCEL to stop the SAUTE.
  16. Add strips of fried eggs and stir for 1 minute.
  17. Serve over rice and sprinkle with some cheese. Eat with kimchi or fukujinzuke pickles.

 

Note:

  1. This serves 6 normal people or 4 curry lovers.
  2. You can halve this recipe to get 2-3 servings.
  3. Use a minimum 4 cups (16 oz) of frozen vegetables, but you can even double the amount and it will be ok. Use common sense. If you buy a 20 oz bag, then use all of it. If you can only find 10.8 oz bags, then buy 2 bags and use all of it.
